I’ve been on the hunt for a homemade chicken strips recipe that’s gluten free, and would pass the “toddler test”!
This is the one that made it through!
These didn’t just get a pass though, oh no, Maddie sat and ate five of them…FIVE! This is pretty much unheard of in our house, so if that doesn’t give you the boost to try these bad boys, nothing will!
My favorite thing about these is that the flavor of the “breading”, it actually makes dipping sauce completely unnecessary, they’re delish on their own! Not only are they healthier, but you’re eliminating empty calories (and tons of sugar!) you would have usually had in those sauces!
For the gluten free breading, I actually used almonds! It sounds weird, but I promise you will love it!
The almonds don’t taste like almonds, the spice mix covers that, it just gives the chicken strips a nice crispy crunch!
Note: You can either buy almond meal already made, or if you have a food processor (here’s the one I used) you can just throw the almonds in whole and process them until they are ground up (takes around a minute).
