I usually bake with a purpose!
The purpose for these cookies…I wanted chocolate, and had none.
So, instead of curling up into the fetal position and preparing for the end of the world this tragedy was sure to bring (that’s what people do when they’re out of chocolate, right?), I stopped my ugly sobbing and got out my baking pan!
These easy chocolate cookies are not too sweet, incredibly moist, and you could easily make them double chocolate cookies by adding about 1/3 cup chocolate chips!
I loved that they didn’t flatten out too much and stayed a nice fat cookies shape! It made them more filling, which prevented my hubby from eating the lot in one sitting.
The oil can be replaced with a canola oil if that’s what you have on hand, but we really enjoyed the slight flavor the coconut oil brings to the table.
